BROWN: Guacamole is best made just prior to eating, but if you need to make it in advance (or you have leftovers), cover it with plastic wrap, making sure the wrap is directly in contact with the surface of the guacamole, and chill. There might still be some slight browning when you take it out, but it can be stirred in or scraped off. Another option is to cover the guacamole with a layer of something that will keep the air off of it (air being what causes the browning). We recommend something that tastes good with guacamole, like salsa or sour cream.
